The ideal candidate is a highly motivated and passionate research scientist with clearly demonstrated expertise in natural products and food science research. You will be experienced in the development of natural taste modulation and clean label flavor ingredients. Your work will also support and coordinate the sourcing of raw materials and product evaluation, analytical and regulatory validation, process scale up, and commercialization. You will be tasked in making Go/No Go decisions at every stage of the product development pathway.
You will spend your time Design and conduct research for developing proprietary, cost-effective, globally natural, and clean-label (when applicable) flavor ingredients and flavorings with taste modifying properties. Coordinate and conduct analytical research as related to natural products isolation, identification, and quantification. Develop and optimize flavor ingredients from enzymatic reactions, process flavor/Maillard reactions and culinary reactions. Identify raw material and natural product sources for product development commercialization. Interact with flavor research and local units pertaining to natural product research, sensory evaluation, analytical and regulatory validation, sustainability, process optimization, product scale-up and commercialization. Write organized reports to summarize research findings and product development process. Review competitor product and patent literature and write patents for novel products.

Required Skills Ph.D. (REQUIRED) with 0-3 years of experience in biochemistry, medicinal chemistry, plant sciences, food chemistry, or other natural products related fields. Knowledge of flavor chemistry, protein chemistry, and taste research including taste modulation.Strong knowledge of plant secondary metabolism, enzymatic biotransformation, and food science. Strong skills in natural products research including extraction, distillation, chromatographic isolation and separation, and chemical instrumental analysis (HPLC, LCMS). Proven record in initiation, development, execution, and completion of research projects. Strong communication skills both written and verbal. Strong interpersonal skills. Computer literacy (proficiency in Microsoft Office).
