JOB OVERVIEW

The Research and Development Manager works with the culinary team to lead all aspects of new and existing product quality/innovation. Recipe testing, ingredient troubleshooting and a strict sense of quality control are necessary to determine the processes, handling, and storage of all goods. The R&D Manager also plays a critical role in education staff and executing menu changes across all fronts.

JOB RESPONSIBILITIES

* Oversee research and development of new and reworked products including:

* Recipe testing, development and management from inception to large-scale production

* Influence and set timelines for product development

* Determine techniques and ingredients used

* Source and order ingredients

* Analyze product shelf life

* Facilitate improvement of product quality and production efficiency

* Ensure cost goals are met

* Maintain organized tasting notes

* Provide tasting samples as requested

* Manage projects including new product offerings, recipe changes and seasonal menus by coordinating with all departments and ensuring all information has been properly communicated

* Responsible for menu change process including:

* Provide product introductions and descriptions to all departments

* Ensure serving and assembly guides have been communicated to the Front of House team

* Confirm production guide has been worked through with the commissary team(s)

* Coordinate with the operations team to ensure logistics have been set

* Oversee production for special events, photo shoots, and promotions as needed. Ensure product consistency and quality

* Troubleshoot product issues from a flavor and quality standpoint. Understand and conduct shelf life testing

* Uphold strict quality assurance standards by conducting organoleptic, weight verification, and moisture tests + packaging audits.

* Conduct research on new topics, techniques, and ingredients as requested

* Lead training for FOH Managers including recipe demonstrations and tastings

* Work closely with regional commissary teams to provide support including designing new recipes according to site-specific ingredient availability and facility conditions

* Provide weekly status updates to the Director of Culinary Operations

* Attend all commissary meetings and update the larger team on current projects

* Travel to outside commissaries and partners as needed

* Manage a small team of assistants including workflow, schedule performance reviews, food safety procedures, hiring, training and discipline

* Fully understand and exhibit the Milk Bar ethos, embodying our core values and inspiring celebration, and serve as a brand ambassador both internally and externally

SKILLS & REQUIREMENTS

* 3+ years of experience working in R&D in the culinary industry with general understanding of food science

* Culinary school degree preferred, and must be Food Safety Certified; NYC Food Handlers License Required

* Passionate and innovative Culinarian with a strong sense of food trends

* Team leader with a positive, solution-oriented mindset

* Meticulous note-taker, hyper-organized, clean, and consistent, you sweat the small stuff!

* Comfortable taking constructive feedback and tirelessly returning to the drawing board

* Ability to perform physical requirements of the position (lift up to 50lbs)
