Skills and Requirements:

Ensure excellent direction in the standards and practices of the Wine Program

  • Develop and direct a wine program that adds quality, value and enhances the guest experience.
  • Provide ample and continuous wine training, tasting and education to ensure staff wine knowledge is top notch
  • Ensure that appropriate physical inventory is available to staff/guests at all times
  • Ensure that all POS systems, inventory systems, wine lists and any other information pertinent to the selling of wine remain accurate and up to date and are understood & adhered to by the team
  • Actively participate in the cycle of service in order to promote, educate and sell wine to restaurant guests.
  • Establish and maintain positive & productive working relationships with vendors
  • Continuously taste, research and remain active & relevant in the industry.

Ensure high performance and profitability while maintaining overall excellence & hospitality throughout each day s specific service periods.

  • Effectively open physical operation/close physical operation when needed
  • Ensure excellent maintenance and cleanliness of the dining room at all times
  • Organize and complete the administrative set up and break down of service (including but not limited to: creation of floor plans, menus, employee check in, employee cash outs, bank close out etc.)
  • Maintain effective & timely communication to all FOH/BOH and team members.
  • Maintain positive working relationship with kitchen leaders and line staff throughout service periods
  • Ensure excellent service & hospitality is provided for all guests, community, vendors and investors
  • Continuously provide support to all service staff and actively participate in the cycle of service as needed
  • Cultivate Regulars and continue to find ways to strengthen the restaurant community

Ensure knowledge of and adherence to all applicable laws, policies and procedures

  • Adhere to all procedures as it pertains to personal appearance, attendance and conduct
  • Complete all assigned administrative requirements accurately and on time
  • Remain current and compliant with the correct HR practices and policies
  • Ensure DOL/Health Department compliance as it pertains to the operation
  • Ensure that the Beverage Inventory process is completed accurately, on time and according to business/accounting procedures.
  • Meet or exceed budget for wine sales and wine COGs
  • With the help of the accounting team, ensure all invoices are correctly processed on time

Continuously build a high performance team

  • In conjunction with Management, hire and train Service Staff according to USHG standards for hospitality and excellence.
  • Manage scheduling of employees when needed
  • Provide continuous training and leadership to develop and grow team
  • Hold employees accountable to all standards and practices, evaluating and/or following disciplinary procedure when necessary
  • Ensure that all employees receive annual performance reviews
  • Conduct exit interviews when an employee is leaving the company

Relevant Knowledge, Skills, & Ability:

  • Excellent food and beverage knowledge, specifically in wine and spirits
  • Strong Understanding of Microsoft Office Suite (Excel, Word, Outlook, Power Point)
  • Strong Understanding of restaurant POS systems

Education/Experience:

  • Preferred Bachelor s Degree or Certification in Hospitality-related field or equivalent expertise gained from time on the job (specifically related to wine & beverage)
  • At least 2 years management experience in hospitality and fine dining with a concentration in wine and beverage education
